Malai Gilori- Milk based sweet dish, that needs immense skills.

Ingredients

  1. 2 liters of full fat milk
  2. 1 cup almond powdered
  3. 3 tbsp icing sugar
  4. 2 tbsp khoya
  5. Saffron
  6. 2tbsp gulkand
  7. Silver warkh (decoration)

Method

  1. Boil milk, constantly stir for few minutes, let it cool. The milk will be covered with thick cream layer.
  2. Remove the cream layer , sprinkle saffron water and let it cool, then cut into square shapes.
  3. Make stuffing by adding remaining ingredients.
  4. Keep spoonful of stuffing on the cream molds, and give triangular shape. 
  5. Assemble it in a serving plate and decorate with silver foil.


Tips

  1. Milk must be full of fats
  2. Allow the cream to coll down sufficiently, or you can't mold it properly.

Satyanarayanacha Shira

Ingredients

  1. Rava (Sooji)
  2. Ghee (Purified butter)
  3. Sugar
  4. Milk
  5. Water
  6. Dry fruits


Method

  1. Heat the ghee in a flat pan, add rava and roast it well until it turns light pink.
  2. Add water and milk and dryfruits into the rava, stir well.
  3. Cover the pan for few minutes, make sure rava is cooked properly.
  4. Finally add sugar and stir well, again cover the pan for few minutes.
  5. You will get pleasant aroma, and that is the sigh of perfectly made Shira.
  6. Finally garnish with almonds and couple of Tulasi leaves, makes it perfect offering for pooja.


Tip- Sooji (Rava) must be roasted on low heat, to avoid burning.

Ingredients

  1. 100 gms french beans
  2. 100 gms carrot
  3. 100 gms green peas
  4. 100 gms potatoes
  5. 1 small cup pineapple slices
  6. 2 small cups apples pieces
  7. 1 small cup cucumber
  8. 100 gms fresh cream
  9. 1 cup mayonnaise
  10. 1 bunch lettuce
  11. salt to taste
  12. sugar to taste
  13. freshly ground black pepper powder to taste

Method

  1. Cut the vegetables into small pieces and boil.
  2. Chop the pineapples and apples.
  3. Mix the fruits and vegetables
  4. Mix the mayonnaise and cream.
  5. Mix this mixture with vegetables. Add salt, pepper and sugar.


Tip: Please do not mix when vegetables are hot, cheese and cream will melt.

Sabudana Vade- Best snacks for fasting


Ingredients
  1. Sabudana  (Sago) 1 1/2 cups
  2. Potatoes (3) boiled and mashed 
  3. Roasted peanuts coarsely ground 1 cup
  4. Green chillies finely chopped 3
  5. Fresh coriander leaves chopped 
  6. Tablespoons 1 
  7. Lemon juice 1 tablespoon
  8. Salt to taste
  9. Oil or Ghee for frying


Process

  1. Wash the sabudana, in enough water and drain the excess water, keep it aside for 4 hours.
  2. Mix together sabudana, potatoes, peanuts, green chillies, coriander leaves, lemon juice and salt. Make a soft dough for making vada.
  3. Take small portion of the dough, make flat vada on your palm, give rough shape by patting it gently.
  4. Fry the vada in an oil or ghee.
  5. Serve with any sauce.
Side Dish

Curd, lemon sweet pickle, pudina chutney

Note: Sogo should be soft enough to make vada, so soak it for 4-5 hours

Patal bhaji (Greens turned into healthy dish)

Spinach curry made with tomato and garlic seasoning..Best dish for simple side dish idea and pleasant for tummy..

Ingredients:

  1. Finely chopped spinach - 1 bunch
  2. Chopped tomoto- 1 cup
  3. Besan (gram flour) – 2 Tbsp
  4. Mustard seeds – 1/2 Tsp
  5. Cumin seeds – 1/2 Tsp
  6. Dry red chili - 2
  7. Chopped garlic - 5 cloves
  8. Water - 2-3 Glass 
  9. Oil – 2 tbsp
  10. Salt - to taste
  11. Sugar- to taste


Process:

  1. Cook spinach, tomato, and peanuts together for 15 minutes by adding water into it. 
  2. Mash the vegetables the add gram flour mix it well, add salt and sugar.
  3. Boil the mixture well until gram powder is cooked properly. Remove the vessel from gas, prepare for seasoning.
  4. Heat oil, then add mustered seeds, whole cumin, chopped garlic and finally red chilies, once the seasoning is splutter well, transfer the same into cooked vegetable mix. It MUST make spluttering sound, believe me its pleasant. 
  5. Serve with hot rice. 


Side Dish:
Fried curdled chilies and any kind of papad.

Note: Vegetable and Gram flour must be cooked properly, else tastes bitter. Follow the cooking order exactly.
